Kitchen Creations with Weeks Outdoors

Easy Pickled Beets

 

Ingredients

2 pounds of fresh beets

¾ cups white vinegar

½ cup sugar

½ cup water

1 cinnamon stick

Instructions

1. Trim the top stem.

2. Wash beets and put in a pot of boiling water for approx. 20 minutes, or until tender.

3. Strain beets in a colander and run under cold water until cool.

4. While under the cold running water peel the beets. Then cut the bottoms and tops off.

5. Cut up beets into even squares or slices.

Brine

1. Combine water, sugar, vinegar and cinnamon stick in a saucepan and heat until sugar dissolves, then remove from heat.

2. Layer beets in a glass jar and pour the brine over beets, completely covering. If the brine doesn’t completely cover the beets just add water.

3. Cover with a lid and put in the refrigerator for about a week.

4. Serve cold or at room temperature.

Freezing Squash

Keep that summer harvest all year round.

Apple Jelly

Tami looked for an apple jelly recipe forever.  This one is AMAZING from Ball.

Zuccini Bread

2 Eggs

1c sugar

3/4c oil

1 1/2 c chopped zucchini

1/2 c chopped walnuts

1 1/2c flour

3/4t cinnamon

3/4t baking powder

1/2t baking soda

1/2t salt


1.Pre-heat the over to 350F

2. Beat the eggs.

3. Add the sugar and mix until fluffy

4. Add oil

5. Mix in zucchini and walnuts

6. Mix all remaining ingredients in a bowl and slowly add to the zucchini mixture.

7. Bake for 55-60 minute


*Tami does play with this a little, we can't give you everything.  Also, if you are allergic to walnuts do not put them in.
